2 sweet potatoes or 1 butternut squash
1 shallot or small onion
1 Poblano Pepper
4 ounces cherry tomatoes
1 bunch cilantro
1.Preheat oven to 400 degrees
2.Peel sweet potato, then cut into half inch cubes. Peel and have shallot, cut halves into quarters. Finely chopped cilantro. Cut lime and tomatoes into halves. Core and seed poblano then cut into half inch squares
3.Toss sweet potatoes, poblano, and shallot in lime olive oil and salt and pepper, then spread on baking sheet.
4.Roast in oven until browned and slightly crispy, 20 to 25 minutes, tossing halfway through.
5. In medium bowl, toss sweet potatoes, poblanos , shallot , tomatoes, cilantro, and squeeze of lime. Season with salt and pepper and serve.
