Chili'd Sweet Potatoes with Homemade Ranch (vegan option)

Chili'd Sweet Potatoes
2 Sweet potatoes cut in 8 wedges each
2 TBSP Squizito spicy oil (Harissa, Chipotle,  or Green Chili) or not spicy (Persian Lime)
1 TBSP Hill Country Chili powder
1 TBSP Dried Thyme
salt & pepper

Ranch Dipping Sauce
1/4 cup mayonnaise or (vegan-vegannaise)
2 TSP fresh lemon juice
1/2 TSP garlic powder
1/2 TSP salt
1/2 TSP pepper
1 TSP Dried parsley

Preheat oven to 400 degrees
In large bowl, toss potato wedges in olive oil, chili powder, thyme, salt and pepper. 
Spread on baking sheet covered in parchment paper in single layer. 
Bake 10-12 minutes until edges are crispy.
For Ranch Dipping Sauce simply stir ingredients until well mixed.
